INGREDIENTS

Yields: 8 Cups

1/2 Cup Dried Doum Pieces (or 1/4 cup powder/granulated pieces)

8.5 Cups Water

DIRECTIONS

  1. Place the Dried Doum and water together in a pot

  2. Bring to a boil and then reduce to a simmer for 15-20 minutes

  3. Remove from heat and let stand until it gets to room temperature

  4. Using a cheesecloth, strain the liquid and reserve it in a pitcher

  5. Store in the fridge and serve chilled!

URBAN SHAMAN TIPS

Add more water as necessary and also adjust the doum amounts you are using as needed.

The desired color for concentration is rich amber. If the color of the liquid is too light, add a few pieces of doum fruit (2-3 shells or 1tsp powder) and simmer for an additional 5 minutes. If the color of the liquid is darker and similar to coffee adjust by adding small amounts of water.

If the final product is too concentrated, serve it diluted with water

Reserve and reboil the doum fruit at least once more for a second batch (should be done immediately and will be slightly lighter, recommended to use less water to yield stronger flavor)
