Shredded Brussel Sprout & Date Salad

INGREDIENTS:

4 cups shredded fresh Brussel Sprouts (approximately 10 oz/2 pounds of Brussel Sprouts)

1/2 cup Dates (about 8-10 Dates)

1/2 Cup Pecans/Walnuts/Almonds 

1/3 Cup Parmesan Cheese OR Goat Cheese (vegan substitute)

2 TBS Extra Virgin Olive Oil 

1.5 TBS Fresh Lemon Juice 

1 TBS Mustard 

1/2 TBS Honey 

1/2 tsp sea salt 

1/8 tsp black pepper 

DIRECTIONS

1). Using a food processor or grater, shred the Brussel sprouts and set aside. Pit and chop the dates into strips or cubes. 

2). Combine Extra virgin Olive Oil, lemon juice, mustard, honey, salt and pepper and whisk until smooth. 

3). Toss the Brussel sprouts with nuts (reserve some nuts for top of salad decor), dates and dressing until well coated. Sprinkle the cheese over the top of the salad and serve!
