Tofu Skewer

Summertime or Wintertime, fire up the barbeque for those nostalgic times! These tofu skewers are a fast and easy-to-make lunch or dinner that keeps transforming with leftovers. 

Ingredients: 

1 Block Extra Firm Tofu 

2 Cups Fresh Pineapple Cubes 

1lb Shishito Peppers OR 1 Yellow Pepper and 1 Green Pepper 

Salt and pepper to Taste 

1/2 tsp Hot Paprika

1/2 tsp Smoked Paprika 

Directions:

  1. Preheat the BBQ on medium heat.

  2. Press the Tofu to remove any excess moisture by placing the tofu block on a paper towel-lined plate, covering the tofu with another paper towel and placing a heavy flat object on it (like a heavy plate or pan). Set aside for 10-15 minutes.

  3. Cut the Tofu into 1” pieces

  4. Skewer the tofu, pineapples, peppers and mushrooms alternating as you arrange.

  5. Lightly brush the skewers with Olive Oil, sprinkling salt and pepper to taste, remember to rub all sides! Dust the skewers with paprika.

  6. (Urban Shaman Pro Tip: take 1/2 onion and skewer onto a fork, dip in some olive oil and use the onion to not only clean the grill racks but also coat the racks to prevent the skewers from sticking!). Grill the skewers for about 10 minutes, flipping halfway through.

  7. Remove the skewers and serve!

Urban Shaman Pro Tip: Serve the skewers with any dipping sauce of your choice, or alongside any meal!
